PUMPKIN BARS OR CAKE 
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 2/3 c. sugar
2 tsp. cinnamon
3 or 4 eggs
1 c. oil
1 (16 oz.) can pumpkin
1 tsp. vanilla
3/4 c. coconut
Raisins or nuts (optional)

Combine dry ingredients and mix well. Add remaining ingredients and pour into a jelly roll pan or large cake pan. Bake in 350 degree oven for 30 minutes. Frost when cool.

FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1 stick butter, softened
1 tsp. vanilla
1 3/4 c. powdered sugar
