ORANGE CHICKEN 
3-4 lb. chicken
1/2 tsp. pepper
1 clove garlic, crushed
2 med. oranges, peeled and sliced (reserve rinds)
1/2 c. orange juice
1/4 c. soy sauce
1 tsp. ground ginger
1/2 tsp. ground allspice
1 tbsp. brown sugar

Rub inside of chicken with pepper and garlic. Stuff with oranges. Place in pot, breast down. Grate rind over chicken. Add orange juice, soy sauce, ginger, allspice and sugar, cover. Ten minutes before done, remove cover to brown.
