CANDIED YAMS 
2 or 3 yams or sweet potatoes
butter
1/2 c. apricot preserves
1/2 c. brown sugar
1/2 c. miniature marshmallows

Scrub potatoes with vegetable brush or dobie pad (I like the latter). Boil until tender. Drain and let cool. Peel and slice, cross cut, about 1/2 inch thick. Spray casserole with Pam, layer sliced potatoes, thin slices of butter, dabs of apricot preserves on the potatoes. Sprinkle with brown sugar and marshmallows. Use some marshmallows on top if necessary to make nice appearance. Bake uncovered or covered in oven at 350-375 degrees for 30 minutes.
