PRIDE OF IOWA COOKIES 
1 c. shortening
1 c. sugar
1 c. brown sugar, packed
2 eggs
2 tsp. vanilla
2 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 c. quick-cooking rolled oats
1 c. flaked coconut
1/2 c. chopped walnuts

Cream together shortening and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Sift together flour, baking powder, baking soda and salt. Gradually stir into creamed mixture. Stir in oats, coconut and walnuts.

Drop by teaspoonfuls 2 inches apart on greased baking sheet. Flatten with floured fork or bottom of drinking glass. Bake in moderate oven (350 degrees) 8-10 minutes or until golden. Remove from pan. Cool on racks. Makes about 8 dozen.
