CHICKEN A LA KING 
2 tbsp. butter
1 c. fresh mushrooms, thinly sliced
1 1/2 c. medium white sauce
1/4 c. minced green pepper
2 tbsp. minced pimento
1 1/2 c. chicken, cooked and diced
2 egg yolks, slightly beaten
1 tsp. prepared mustard
2 tbsp. lemon juice
Salt and pepper
Patty shells or toast

In a heavy skillet, melt butter. Add mushrooms; saute until soft. Add to prepared medium white sauce. Add green peppers, pimento, and chicken. Beat egg yolks slightly and add mustard, lemon juice, salt, and pepper to taste. Add to chicken mixture; mix well. Heat until boiling point is reached. Lower heat and simmer gently until heated through. Serve over hot baked patty shells or toast points. Serves 4 or more.
