CHUNKY GUACAMOLE SALAD 
3 ripe avocados, peeled, cut into 1/2" cubes
2 tbsp. plus an additional
1/3 c. fresh lime juice
6 ripe plum tomatoes, each cut into 8 pieces
3 tbsp. chopped red onion
1 tbsp. Dijon style mustard
1 tsp. finely minced garlic
1/2 c. Spanish extra-virgin olive oil
3 tbsp. chopped fresh cilantro, oregano & Italian parsley
1 c. slice black olives

Place avocado cubes in a large bowl and sprinkle with 2 tablespoons lime juice. Toss in tomatoes and red onions and black olives.

In a separate bowl, whisk together 1/3 cup lime juice, mustard and garlic. Slowly drizzle in olive oil, whisk constantly. Add salt and black pepper. Pour 1/3 cup of this dressing over salad; toss. (Save additional dressing for use at another time.) Before serving, toss in fresh chopped herbs, cilantro, oregano and Italian parsley.
