JUDI'S CRAB SGETTI | |
This is a very fast sauce to prepare so I suggest cooking the noodles and any other items you want with your meal before you make the crab/butter sauce (i.e. salad, garlic bread, or vegetable). 1/2 to 3/4 lb. crab meat or imitation crab (which I use) Start boiling noodles at least 10 minutes prior to starting sauce. Set crab meat out while cooking butter sauce. BUTTER SAUCE: 2 tbsp. olive oil 4 to 8 cloves of garlic (crushed then chopped) 2 tsp. basil 3 tbsp. butter 4 tbsp. soy sauce 1/4 to 1/2 cup nice fruity white wine (cooking wine will work OK) Heat large skillet on medium-high. Add in 2 tablespoons olive oil. Brown the 4-8 cloves of crushed and chopped garlic (30 seconds). Add basil (30 seconds). Add butter and soy sauce. Stir and let simmer (45 seconds). Add 1/4 to 1/2 cup white wine. Reduce heat and let simmer for 5 minutes. After 5 minutes, add crab meat and warm until slightly hot. Strain noodles, place in large bowl and pour crab butter sauce over the top. Makes enough for 3 to 4 people. Submitted by: Judi Ostrowski |
