JEANNE'S LEMON CHICKEN 
4 chicken breasts, boned & skinless
1/4 c. lemon juice
1/4 c. butter
Salt & pepper to taste

Place chicken in shallow baking dish. Pour lemon juice over chicken. Dot with butter; sprinkle with salt and pepper. Bake, uncovered in 325 degree oven for 30 minutes, basting several times during baking. Sprinkle with chopped parsley when served, if desired. Serve with fruit salad, steamed vegetables and homemade bread! Serves 2 to 4 people.
