BEEF AND CABBAGE CASSEROLE 
1 tbsp. oil
1 lb. lean ground beef
1 onion, chopped
1 (10 1/2 oz.) can tomato soup
1 soup can of water
4 tbsp. uncooked rice
4 to 5 c. finely shredded cabbage
Salt and pepper to taste

Preheat oven to 350 degrees. Pan fry beef and onion in oil until brown. Drain. Add soup, water, salt, pepper and rice. Bring to boil and then simmer for about 3 minutes, stirring constantly. Place cabbage in 3 quart casserole dish. Spoon beef mixture over cabbage. Cover. Bake for 1 hour.
