MOCK APPLE PIE 
1 1/2 c. sugar
2 tsp. cream of tartar
20 Ritz crackers
Dash of cinnamon
2 c. water
2 tbsp. lemon juice
Butter
Unbaked pie shell

Boil water, sugar and cream of tartar for 2 minutes. Then drop in 20 Ritz crackers (do not stir) and boil for 1 minute longer. Remove from heat, and add 2 tablespoons of lemon juice. Let cool. Pour into unbaked pie shell and dot with butter and cinnamon. Bake in 300 degree oven for 30 minutes.
