OATMEAL FRUIT MUFFINS 
1/2 c. all purpose flour
1/2 c. whole wheat flour
1 c. uncooked quick oats
1/4 c. brown sugar
1/2 tsp. cinnamon
3 tsp. baking powder
1/2 tsp. baking soda
1 beaten egg
3/4 c. fruit juice (orange, apricot nectar) or 1 c. plain or vanilla yogurt
1/2 c. vegetable oil
3 tbsp. honey or molasses (optional)
1 c. chopped dried apricots, dates, blueberries, raisins (select one)

Preheat oven to 400 degrees. In large bowl mix dry ingredients. Mix liquid ingredients in medium bowl. Stir liquid into dry ingredients. Fold in fruit. Spoon into well greased muffin cups.

Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Makes about 12 medium sized muffins.
