HONEY DATE RICE CRUNCH | |
3 qt. water 3 lb. (1 3/4 qt.) UNCLE BEN'S® perfected brown rice 3/4 c. butter 1 c. light brown sugar, packed 2 tbsp. salt 2 tbsp. cinnamon 1 tbsp. nutmeg 1 1/2 c. raisins 1 1/2 c. dates, pitted, chopped 1 c. walnuts, coarsely chopped 1 1/2 c. honey Whipped topping as desired Bring water to a boil. Stir in rice, butter, brown sugar, salt, cinnamon and nutmeg. Cover tightly and simmer until most of water is absorbed, about 25 minutes. Stir in raisins, dates and walnuts. Transfer to shallow pan. Cover and let stand until all liquid is absorbed. Pour honey over rice mixture; stir. Serve warm with whipped topping. Approximately 50 (1/2 cup) servings |
