LEMON PARSLEY CHICKEN AND RICE 
3-4 boneless chicken breasts
1 tbsp. oil
1 1/2 c. chicken broth
1 1/2 c. instant brown rice, cooked
1 tsp. lemon juice
Salt and pepper
1/2 c. almonds
2 tbsp. chopped parsley

Brown chicken in oil in skillet. Add broth when chicken is brown. Put rice on top of chicken and add parsley, lemon juice, and salt and pepper and almonds. Bake in oven at 325 degrees for 15 minutes covered.
