PASTA NICOISE 
4 oz. pasta of your choice
2 tbsp. olive oil
1 clove garlic, minced
2 plum tomatoes, coarsely chopped
1/2 c. artichoke hearts, frozen and defrosted, or canned in water, quartered
2 tbsp. sliced black olives
1 tbsp. capers
2 tbsp. fresh parsley, chopped
1/2 c. Feta cheese, crumbled

Prepare pasta according to package instructions. In a medium saucepan, heat olive oil and add garlic. Add the tomatoes and saute for 2 to 3 minutes. Add the artichoke hearts, olives, capers, parsley and feta cheese. Cook for an additional 2 minutes. Remove from heat and toss with the drained pasta.
