GOOEY BUTTER CAKE | |
8 oz. soft whipped cream cheese, room temperature 3 oz. bitter sweet chocolate, melted 1 egg 1 lb. confectioners sugar, sifted CAKE: 1 1/2 c. all purpose flour 1 c. sugar 1/4 c. cocoa powder 1/2 tsp. salt 2 tsp. baking powder 1 stick butter, melted 2 eggs 1/2 c. milk 1 tsp. vanilla extract Preheat oven to 350 degrees. Butter 9 x 13 inch pan. Prepare topping firm. Whip together cream cheese, melted chocolate, and egg. When smooth, stir in sifted confectioners sugar. Set aside. To make the cake, mix the dry ingredients, preferably in the bowl of a mixer. In another bowl, stir together melted butter, eggs, milk, and vanilla. Slowly add the liquid ingredients to dry ingredients; beat for 3 minutes. Pour batter into prepared cake pan. Gently spread cream cheese topping over the batter. Bake for 40 minutes. Cool cake completely, at least 4 hours, before cutting. The cake will stay moist and delicious for 3 days. |
