VEGETARIAN LENTIL SOUP 
1 1/2 c. washed lentils (brown type i.e. Jack Rabbit)
2 celery stalks, sliced
2 carrots, peeled & sliced
1 med. onion, chopped
1 potato, diced (opt.)
Dash of sherry
Dash of olive oil
2 tbsp. red wine vinegar
2 bay leaves
Salt & pepper
Approx. 3 c. water

Combine above ingredients in a large pot.

Bring to boil, reduce heat and simmer approximately 1 1/2 to 2 hours. Check occasionally to see if water is needed.
