3 lb. pork butt roast 12 c. water Salt and pepper to taste 2 lg. onions 2 bay leaves 4 c. steel cut oatmeal Boil 5 above ingredients until meat falls off the bones, about 1 1/2 to 2 hours. Remove meat from bone. Discard fat and bones. Cut fine or grind. Strain broth and bring to a boil. Add meat and gradually add oatmeal to the boiling mixture. Stir until broth is absorbed and mixture is thick. Put in bread pans small or regular. Put in refrigerator until set. Remove and cut in meal size chunks and wrap in Saran Wrap and freeze. I like it sliced in 1/4 slices and fry brown on both sides. |
