VENISON SCALLOPINI | |
2 lb. deer steak 6 tbsp. oil oil 1 tsp. garlic powder 1 (12 oz.) can tomatoes 1 tsp. oregano 1 tsp. parsley flakes 1 tsp. salt 1/2 tsp. black pepper 4 slices Mozzarella cheese Cut the round steak into 4 equal portions. In a skillet, blend the garlic powder with the olive oil then brown the steaks on both sides over medium heat. Add tomatoes and sprinkle the seasonings over the top of the steaks. Reduce the heat to very low, cover pan and slowly simmer for 45 minutes. Spoon the tomatoes and juices onto an oven proof platter, arrange the steaks on top, then lay a slice of cheese on top of each of the steaks. Put platter into a preheated 400 degree oven until cheese is melted and just beginning to brown. 4 servings. |
