WASHINGTON APPLE CAKE 
3 eggs
2 c. sugar
1 c. cooking oil
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped walnuts
4 c. thinly sliced, peeled, tart apples

Beat eggs until thick and light. Combine sugar and oil; pour into eggs with mixer on medium speed. Stir together flour, cinnamon, salt and soda; add to egg mixture. Add vanilla and mix. Stir in walnuts. Butter a 13 x 9 x 2 inch glass pan. Spread apples in pan. Pour batter over apples, spreading to cover. Bake at 350 degrees for 1 hour. Cool and spread with cream cheese frosting.

CREAM CHEESE FROSTING:

Soften 1 (3 ounce) package cream cheese. Beat until light and fluffy. Pour in 1/4 cup melted butter, then beat in 2 cups of powdered sugar and 1 teaspoon lemon juice. Spread over cooled cake. Makes 12-15 servings.
