HONEY CORN MUFFINS 
1 c. stone-ground cornmeal
1/4 c. unbleached white flour
1 1/2 tsp. baking powder
1 egg
1/3 c. milk
1/4 c. honey
3 tbsp. melted butter or oil

Into mixing bowl sift together corn meal, flour, and baking powder. In a separate bowl combine egg, milk, honey, and butter or oil. Add to dry ingredients, stirring just enough to moisten. Fill well-buttered or oiled muffin tins 2/3 full. Bake at 400 degrees for 20 minutes or until done. Makes 8 muffins.
