EASY YEAST ROLLS 
1/4 c. sugar, can use more
1 pkg. scant tbsp. yeast
1 c. plus 2 tbsp. very hot water
3 1/2 c. bread flour, you can substitute 1 to 1/2 c. whole wheat flour
1 tsp. salt
1/4 c. oil, can add more for richer product
1 egg, can omit, but add 2 additional tbsp. water

In large bowl, put sugar, yeast and water. Let set until foam appears on top of water. Add flour, salt, oil and egg. Stir until well-blended. If sticky, add a little more flour. Cover with cloth. Let rise until double in size, 1 to 2 hours. Turn onto floured surface. May want to let it rest for a while. Shape into your favorite roll. place in greased pan. Let rise until double in size, 1 to 1 1/2 hours.

Bake at 375°F for 10 to 12 minutes. Dough can be refrigerated.

Variation of Easy Yeast Rolls:

1 tsp. cinnamon, more if desired
1/2 tsp. nutmeg, if desired
1/2 c. chopped dates or raisins
powdered sugar
hot water

Using easy yeast rolls recipe, add cinnamon, nutmeg and dates.

Bake as above. While warm, spread with a thin glaze made by mixing hot water with powdered sugar. After cooling, make a thicker glaze. Use a decorator tube or spoon and make crosses on each roll.

Bake and you will have Hot Cross Buns.
