CHICKEN SCAMPI 
1/2 c. butter
1/4 c. olive oil
1/4 c. finely chopped green onion
1 tbsp. minced garlic
Juice of one lemon
2 lbs. chicken breasts, boned, skinned and cut into 1/2 inch pieces
1 tsp. salt
1/2 tsp. pepper
1/4 c. minced fresh parsley
1 tomato, chopped
Rice or noodles

In skillet heat together butter and olive oil and saute green onion and garlic. Add lemon juice, chicken, salt, pepper and parsley. Continue cooking, stirring constantly for 5-8 minutes or until chicken is done. Add tomatoes and heat through. Serve over buttered noodles or hot rice. Yield: 4-6 servings.
