LEMON CRUNCH FRUIT COOKIES 
2 c. flour, sifted
1/2 tsp. baking soda
1/2 c. sugar
1/2 c. brown sugar
1/2 c. butter
1 egg
1 tbsp. grated lemon or orange peel
3 tbsp. lemon or orange juice
1/2 c. 40% bran flakes

Use favorite dried fruits (raisins, dates, apricots, etc.); add 1/2 cup nutmeats.

Cream sugars and shortening. Add egg, beat well. Then add lemon peel and juice. Fold in dry ingredients, and lastly add bran flakes, dried fruit and nuts. Drop on oiled cookie sheet. Bake in 350 degree oven for about 10 minutes. Do not over bake.
