DIABETIC COOKIES 
1/2 c. chopped dates
1/2 c. chopped prunes
1/2 c. raisins
1 stick butter
2 eggs, beaten
1 tsp. vanilla
1 c. flour
1 tsp. baking soda
1/4 tsp. nutmeg
1/2 tsp. cinnamon

Boil the dates, prunes and raisins together with 1 cup of water for 5 minutes. Add the butter and cool for 30 minutes. Add the eggs and vanilla. Sift the dry ingredients and mix with wet mixture. Place in 8 x 12 inch pan. Bake at 350 degrees for 25 to 30 minutes. Keep in refrigerator. Will freeze very well.
