EASY CHEESY MUFFINS 
1 3/4 c. flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 beaten egg
3/4 c. milk
1/3 c. cooking oil

Stir together flour, sugar, baking powder and salt. Make a well in the center, combine egg, milk and oil. Add all at once to flour mixture, stir until moist. Add 1/2 cup shredded cheddar or Swiss cheese. Pour muffin cups 2/3 full and bake for 20 minutes at 400 degrees.
