HARD COOKED EGGS 
Cover eggs in pan with enough water to come at least 1 inch above eggs. Bring rapidly just to boiling. Turn off heat. Cover. Let stand in hot water 15 minutes. Cool eggs in cold water. Shells are easier to remove and dark surface is prevented on yolks. To remove shells, roll eggs between hand to loosen shell - holding under running cold water helps to ease off shells.
