HOMEMADE MAYONNAISE 
1 egg, room temp.
1/4 tsp. salt
1 1/4 c. unsaturated oil
2 tbsp. lemon juice
1 tbsp. apple cider vinegar

Put the egg, the salt and 1/4 cup of oil into blender. Cover the container and start the blender at low speed. When the mixture is thoroughly combined and while the blender is still on, slowly pour in another 1/2 cup of oil. Then add the lemon juice and the vinegar. Add the last 1/2 cup of oil very slowly to the mixture and continue to blend until the mixture thickens. Store in the refrigerator. Makes about 1 3/4 cups of mayonnaise.
