MICROWAVE DOUBLE CHEESE -
BROCCOLI CASSEROLE
 
2 pkgs. (10 oz.) frozen chopped broccoli
3 eggs, lightly beaten
3 tbsp. flour
1 tsp. salt
1/4 c. chopped onion
1 c. cream style cottage cheese
1 c. shredded cheddar

Defrost broccoli in microwave. Drain well. In medium bowl blend eggs, flour, salt and onions. Stir in remaining ingredients, add broccoli. Microwave at high 3 to 6 minutes or until cheese mixture melts and begins to set. Stir every 2 minutes. Pour into 8 x 8 inch baking dish. Cover with waxed paper. Place in microwave on inverted saucer. Cook at 50% power 15 to 25 minutes or until set. Rotate dish occasionally.

Since microwave ovens vary in power, you may need to adjust your cooking time.
