PICKLED CHICKEN 
1 (3 lb.) chicken
1 tbsp. salt
1/2 tsp. pepper
1 bay leaf
1/2 c. vinegar
1 c. olive oil
4 tbsp. butter
1/2 onion

Rub chicken with salt and pepper. Brown in hot olive oil. Arrange the slices of onions over the chicken and add butter, bay leaf, and vinegar. Cover and cook over low heat until chicken is tender.
