SCALLOPED RHUBARB 
3 c. stale bread or placed onto dry, cut off crusts, cut in 1/2 inch pieces
4 c. diced, uncooked fresh rhubarb, cut in 1 inch pieces
1 3/4 c. sugar
1/4 lb. melted butter
(Little red coloring if you like)

Add sugar to rhubarb, mix well. Place in 9x13 inch baking dish, greased lightly with butter. Add bread to butter and place on top of rhubarb. Add 1 tbsp. water in each corner. Bake 45 minutes, 325 degrees.
