CHUNKY PEANUT BRITTLE | |
1 (12 oz.) pkg. peanut butter chips 1 1/2 c. butter 1 3/4 c. sugar 3 tbsp. water 3 tbsp. light corn syrup 1 1/2 c. salted peanuts, coarsely chopped 3 oz. chocolate chips Lightly grease jelly roll pan. Sprinkle 1 cup peanut butter chips evenly over bottom of pan; set aside. In 2 quart saucepan over medium heat, heat butter, sugar, corn syrup and water to boiling, stirring constantly. Continue cooking, stirring frequently until temperature reaches 300 degrees. Remove pan from heat, stir in chopped peanuts. IMMEDIATELY pour mixture evenly into prepared jelly roll pan. Quickly sprinkle mixture with chocolate chips and remaining peanut butter chips. Cool completely. Break into pieces and store in tightly covered container. 235 calories per ounce, but definitely worth it! |
