PINEAPPLE CASSEROLE 
1 (20 oz.) can chunk pineapple, drained
3 tbsp. pineapple juice
1/2 c. sugar
3 tbsp. all-purpose flour
1 c. cheddar cheese, grated
1/4 c. melted butter
15 crushed Ritz crackers

Mix first 5 ingredients, put in 1 quart casserole dish. Toss Ritz cracker crumbs in melted butter. Top casserole with crumb mixture. Bake at 350 degrees for 20 to 30 minutes. Good warm or cold.
