CHICKEN PIE 
2 c. cooked chicken, cut up
1 c. cooked rice
1 tbsp. lemon juice
2/3 c. celery, chopped fine
1/4 c. onions, chopped fine
1/2 c. mayonnaise
Salt and pepper to taste
3 chopped hard boiled eggs
1 can undiluted cream of chicken soup

Mix all together. Put in casserole dish. Crumble stack of Ritz crackers and sprinkle over top. Melt 1 stick of butter and pour over top of Ritz crackers. Bake at 350 degrees for 30 to 40 minutes.
