MEATLOAF PIE 
CRUST:

1 1/2 c. flour
2 tsp. sugar
1 tsp. salt (omit if using self-rising flour)
1/2 c. oil
2 tbsp. milk

Combine flour, sugar and salt. Add oil and milk; mix well and pat in a 9 inch pie pan. Preheat oven to 350 degrees. Mix meatloaf as you normally would (uncooked), prepare 4 servings of instant mashed potatoes (according to package directions). Pat some of the meatloaf on the bottom of pan approximately 1/2 inch thick. Spread mashed potatoes over meatloaf layer. Pat remaining meatloaf on top of potatoes. Cover with foil. Bake about 30 minutes with foil on top remove foil and bake for 15 minutes more.
