CHOCOLATE MOUSSE PIE AU RHUM | |
1 1/2 tbsp. sugar 8 oz. semi-sweet chocolate 1/4 c. water 8 eggs, separated 2/3 c. sugar 1 1/2 tsp. vanilla 1 tsp. rum extract or 1/4 c. dark rum Sprinkle 1 1/2 tablespoons sugar over well buttered sides of 9 inch pie pan. Melt chocolate. Beat egg yolks, gradually add 2/3 cup sugar. Beat until thick and light. Blend in chocolate and flavoring. Beat egg whites with a dash of salt to stiff peaks. Fold into chocolate mixture. Measure 4 cups into pie pan. Bake at 350 degrees for 25-30 minutes. Cool 15 minutes. Then chill 1 hour. Center will fall forming a shell. Chill remaining batter. Then spoon into chilled shell. Chill 3 hours. May garnish with whipped cream. |
