CAULIFLOWER WITH CHEESE SAUCE
AND BACON
 
1 lg. cauliflower
Salt
4 tbsp. melted butter
4 tbsp. flour
2 1/2 c. milk
1/2 tsp. pepper
1 c. grated cheese
12 slices fried bacon, crumbled

Remove leaves and stalks from cauliflower. Soak head down in cold, salted water for 20 minutes. Place in large amount of boiling salted water. Cook, uncovered, for 10-20 minutes or until tender; drain.

Combine butter and flour in double boiler; add milk, 1 teaspoon salt and pepper. Cook, stirring frequently, until thickened. Add cheese, stirring until melted. Pour over cauliflower; top with bacon. Makes 8 servings.
