AVOCADO ROMANOFF 
1 ripe avocado
8 oz. crabmeat
2 green onions
1 tbsp. mayonnaise
1/3 tsp. horseradish
1/2 tsp. lemon juice
Black pepper
Celery salt
Bibb or Romaine lettuce leaves
Caviar (optional)

Open avocado and cut each half into 3 wedges. Chop crabmeat and green onions together. Mix together with mayonnaise, horseradish, lemon juice, pepper, and celery salt to taste. Arrange avocado slices on lettuce leaves. Fill cavity with crabmeat mixture. Top each avocado with caviar such as black lumpfish, if desired.
