ZUCCHINI MUFFINS 
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. sugar
1 lg. egg
1/2 c. oil
1/2 c. milk
1 c. shredded zucchini
1/2 c. chopped nuts
1/2 c. raisins

In a large bowl mix dry ingredients with a fork. In a small bowl, beat milk, egg, and oil. Add to the dry ingredients. Stir with a fork until moist. Add zucchini, nuts, raisins, and stir. Fill muffin tins 2/3 full. Bake at 375 degrees for 20-25 minutes.
