OATMEAL SCOTCHIES 
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. (2 sticks) butter, softened
3/4 c. sugar
3/4 c. brown sugar
2 eggs
1 tsp. vanilla extract
3 c. quick or old fashioned oatmeal, uncooked
1 (12 oz.) pkg. butterscotch chips

In small bowl combine flour, baking soda, salt, and cinnamon; set aside. In large bowl beat butter, sugar, brown sugar, eggs, and vanilla until creamy. Gradually add flour mixture. Stir in oats and butterscotch chips.

Drop by spoonfuls onto ungreased cookie sheets. Bake at 375 degrees for 7-8 minutes for chewier cookies; 9-10 minutes for crisper cookies. (Yield 3 1/2 to 4 dozen cookies)
