SWEET POTATO PIE | |
1 unbaked 9 inch pie shell 4 med. sweet potatoes, peeled and cooked until soft 3 eggs, lightly beaten 1/3 c. sugar 1/4 tsp. nutmeg 3/4 tsp. cinnamon 1/2 tsp. allspice 1/4 tsp. salt 1 tsp. grated lemon rind 1 1/2 c. light cream 4 tbsp. melted butter Preheat oven to 400 degrees. Mash sweet potatoes and set aside. Combine eggs, sugar, spices, salt, lemon rind and cream. Pour into sweet potatoes and stir until thoroughly combined. Add butter and mix well. Pour into pie crust and bake 45-55 minutes or until knife inserted in center comes out clean. Let cool completely before slicing. |
