SQUASH RELISH 
4 c. squash
3 onions
1 can pimento
3 bell peppers
1 hot pepper (optional)
2 tbsp. mustard seeds
3 c. sugar
2 c. vinegar

Dice squash, onion, peppers and pimentos. Put in a large bowl and add seeds. Combine sugar and vinegar; pour over ingredients and let stand 1 hour. Then bring to a boil for 5 minutes.

Makes about 6 pints.
