FRUITED PANCAKE 
2 tbsp. butter
4 eggs
1/2 c. milk
1/2 c. flour
1/2 tsp. salt

FILLING:

Assorted fruits or meat
Butter and powdered sugar

Preheat oven to 450 degrees. Divide butter between two 9 inch pie plates. Place pie plates in oven. Beat eggs, milk, flour and salt until smooth. Pour half into each pie plate. Bake 8 minutes. Reduce heat to 350 degrees and bake an additional 12 minutes. Meanwhile, slice chosen fresh or canned fruit into a bowl, add small amount of sugar, stir, and let set (bananas, strawberries, peaches, etc.). When pancake is done, remove from oven, transfer to plate, put a serving of fruit down middle of pancake, fold side in, sprinkle with powdered sugar and butter. Place back in oven for 2-3 minutes. Repeat with remaining pancake. Two generous servings. Meat can replace fruit.
