MANICOTTI 
1 (8 oz.) box manicotti, par boiled
1 chopped green pepper
4 minced garlic cloves
1 lg. chopped onion
1 chopped rib celery
1/4 c. olive oil
1/2 lb. ground beef
1/2 lb. ground pork
1 (10 oz.) pkg. frozen spinach, thawed and drained
1 c. Parmesan cheese
1/2 c. chopped parsley
2 hard cooked eggs, chopped
1/2 c. bread crumbs
2 eggs, well beaten
1 1/2 tsp. oregano
1 1/2 tsp. salt
1 tsp. pepper
3 lg. cans tomato sauce

Saute onion, green pepper, celery and garlic in olive oil. Add the meats and cook until lightly browned. Add spinach, cheese, parsley and hard-cooked eggs. Cook over low heat until the mixture is well-browned and well blended.

Add bread crumbs, eggs, oregano, salt and pepper. Cook until somewhat firm. Stiff manicotti with meat mixture and arrange side y side in shallow baking dish. Cover with tomato sauce and bake at 350 degrees for 30 minutes. Serve topped with additional Parmesan cheese, if desired.
