POSOLE WITH PORK 
3 lbs. boneless pork, cut into chunks
6 c. water
5 c. hominy (half yellow, half white)
1 c. chopped onion
1 tsp. garlic powder
2 tsp. leaf oregano
3 red chili pods or 3 tbsp. chili powder
1 1/2 to 2 tsp. salt, or to taste

Place pork and water in a saucepan and cook, covered until meat is tender, about 1 hour. Add remaining ingredients, tasting for salt. (Additional seasonings may be added to taste).

Simmer over a low flame for 20 to 25 minutes. Serves 8 to 10.
