BAKED CHICKEN IN RICE 
1 sm. onion
1 sm. stalk celery
1 tbsp. green pepper
1/2 stick butter
1 c. rice, uncooked
2 cans consomme
1 chicken, cut up

Saute cut up onion, celery and green pepper. I always melt more butter in roasting pan and turn chicken in butter. Salt chicken to taste. (Consomme has lots of salt in it.) Place rice, consomme and saute mixture in bottom of roasting pan. Place buttered chicken on top. Place in preheated oven for 1 hour at 350 degrees.
