ZUCCHINI BREAD 
3 eggs
2 c. raw zucchini, grated
2 c. sugar
1 c. oil
3 tsp. vanilla
3 c. plain flour
1/4 tsp. baking powder
1 tsp. baking soda
1/2 c. chopped pecans

Beat eggs until light. Set aside. Mix together zucchini, sugar, oil and vanilla; mix well. In another bowl sift together 3 cups plain flour, 1/4 teaspoon baking powder. Add flour mixture to egg mixture; mix well. Add chopped pecans. Add zucchini mixture. Pour into well greased loaf pans. Bake at 325 degrees for 1 hour or until done. Ice when cool and slice.

CREAM CHEESE FROSTING:

1 (8 oz.) cream cheese
1/2 stick softened butter
1 tsp. vanilla
1 box confectioners' sugar

Mix all ingredients until smooth.
