PLANKED SALMON STEAKS 
4 salmon steaks
1 lemon, cut in wedges
1/8 tsp. garlic salt
Parsley
2 tbsp. butter, melted
Mashed potatoes

Cut four pieces of aluminum foil about the size of the salmon. Place 2 slices of lemon and a piece of foil under each salmon steak. Brush salmon with butter and season with garlic salt. Broil 4 inches from the broiler unit, about 10 minutes. There is no need to turn the salmon.

Arrange salmon on a plank or heat-proof platter. Mound fluffy mashed potatoes around salmon. Place under broiler just long enough to brown potatoes. Garnish with parsley and lemon wedges. Serves 4.
