MINESTRONE SALAD 
2 med. tomatoes, blanched, peeled, seeded and chopped
1/2 c. each diced carrot, blanched, diced celery, diced zucchini, and chilled cooked small macaroni shells
1/4 c. blanched frozen peas
1 oz. each minced prosciutto (Italian style ham) and drained rinsed canned chick peas
2 tbsp. finely diced red onion
1 sm. garlic clove, minced
2 tbsp. canned ready to serve chicken broth
1 tbsp. chopped fresh Italian (flat leaf) parsley
2 tsp. each olive oil and red wine vinegar
1/2 tsp. Italian seasoning
1/2 tsp. grated Parmesan cheese

In medium bowl combine tomatoes, carrot, celery, zucchini, macaroni, peas, ham, chick pea, onion, and garlic. In small bowl using a wire whisk, combine remaining ingredients except cheese and beat until combined; pour over vegetable mixture and toss well to coat. Sprinkle with Parmesan cheese.
