PEANUT BRITTLE | |
1 c. sugar 1 c. raw peanuts 1/2 c. white corn syrup Pinch of salt 1 tsp. butter 1 tsp. baking soda 1/2 c. water 1/2 tsp. vanilla Cook sugar, syrup and water to soft ball stage (mixture forms soft ball when dropped into cold water). Add peanuts. Continue cooking until syrup is light brown in color and gives hard crack tests (mixture is very brittle when dropped into cold water and will not stick to teeth). Remove from fire. Add vanilla and soda. Mix ingredients well. Pour onto oiled sheet, spreading thin as possible. When cool, break into pieces. |
