LIGHT ZUCCHINI BREAD | |
3 eggs, beaten 2 c. sugar 1/4 tsp. vanilla 2 c. peeled and grated zucchini 2 1/2 c. flour (sometimes a little more) 1/2 tsp. cinnamon 1 tsp. baking soda 2 tsp. baking powder 3/4 tsp. salt 1/4 tsp. ginger 1 c. chopped nuts 3/4 c. oil Preheat oven to 350 degrees. Beat eggs, add oil and sugar. Beat well. Add flavoring and zucchini, beat again. Mix dry ingredients together; add nuts. Bake in small oaf pans at 350 degrees for 1 hour. Cool in pans. Breads remove easily. Cool. This freezes well. |
